What is the max call sessions each of the following versions can handle (Brekeke Sip Server 2.x|3.x) :

It depends on hardware spec and network bandwidth.
Version3's Advanced Edition will provide the best performance.

Lets say either:

Dell Poweredge 1950 or 400SC

Do any of those versions have a call volume limit?
